The Smart Oven is equipped with Element IQ cooking technology, which adjusts the power of the five individual quartz heating elements to cook food more evenly and quickly. Nine different menu options allow users to choose the best setting for the food they are cooking. In addition to dynamically distributing heat to different areas, the Smart Oven can adjust the wattage of its heating elements for even more cooking flexibility. Most ovens have elements with fixed wattage that can only switch between ON and OFF, but Element IQ functions much like a dimmer on a light switch, increasing or decreasing element power with a simple turn of the knob.
For example, broiling requires high heat from above in order to melt and brown, so the Smart Oven activates 1500W of high heat from the top elements of the oven. On the other hand, toast needs to be cooked evenly on both sides without drying out the inside, so the Smart Oven uses high radiated heat from above and below (1800W distributed between four elements) to crisp the outside quickly.
Baking utilizes another feature of the Smart Oven that contributes to even heating: convection heating. Convection cooking uses a fan to circulate hot air so all sides of the food cook at the same rate. This is particularly important for baked goods, such as cookies and cakes, which need to be cooked evenly all the way through.

The VE-300 can handle up to 700 watts and is able to operate as a proportional style thermostat OR as an on/off style thermostat; plus special “extra” features. WHAT IS A PROPORTIONAL STYLE THERMOSTAT? Similar to an on/off style thermostat, a proportional thermostat has a probe that tells it when heat needs to be turned “on” or turned “off”. Unlike an on/off style thermostat, a proportional thermostat also works like a dimmer in that it can adjust the amount of voltage being applied to the heating device. But it’s better than a dimmer because it can measure the temperature and it knows exactly how much power needs to be applied to the heating device to maintain the desired temperature. The very small “slop” in proportional thermostats is usually measured in 1/10 degrees. The two examples of proportional thermostats are the Dimming Proportional Thermostat and the Pulse Proportional Thermostat; such as the VE-300 when used in proportional mode. In this mode, the VE-300 “pulses” electricity to the heater. These “pulses” can be short pulses if the temperature is close to the set temperature, or can be long pulses, if the temperature is too low. HOW DOES THE HIGH/LOW HISTORY WORK? The VE-300 will also store the High and Low temperatures during operation. You can toggle the default display to view these recorded temperatures by depressing the “History” button. You can reset the Low or High history value by depressing the “Clear” button while the value is displayed. These values will be saved by the battery backup in case of power failure.
